Terroir
Sancerre is a famous wine region in France. Located in the Loire Valley, in the center of France, easter Loire, closer to Burgundy than Atlantic. Sauvignon Blanc and Pinot Noir are the two main varieties planted in this region.
Soils are mainly made of chalk, which fit aromatic grape varieties such as Sauvignon Blanc, Sauvignon Blanc from Sancerre displays grapefruit, hay and flint flavors, enhancing minerality brought by the terroir. Wines are usually dry, with high acidity and interesting minerality, that make them great companion to seafood and cheese.
Vinificaiton
The Jean Beauvillon team closely monitors vinification following strict specifications. Alcoholic fermentation takes place in stainless steel tanks with controlled temperatures. It is followed by malolactic fermentation in order to develop wine's complexity. The wine is then stored in stainless steel tanks prior to bottling.
